Pennywort is used as a medicinal herb in traditional Burmese medicine, Ayurvedic medicine, traditional African medicine and traditional Chinese medicine.

Khai Nyui’s Pennywort Salad

Combine all ingredients and mix well. Salad can be eaten immediately.

Method:

Toss the pennywort leaves, peanuts, tomatoes and chili (if using) together and set aside. To make the dressing, combine the sugar, lime and fish sauce. Pour the dressing over the pennywort mix and toss to cover completely. If desired, finish the salad with a couple of fried shallots and onions on top and serve.
